Friday, July 29, Banquet

     To be held at the university's private country estate, The Club at UK's Spindletop HallYou may choose from three menu options:

     1) Braised Angus Beef Short Ribs with roast garlic mashed potatoes, bacon-wrapped green beans and red wine infused jus.

     2) Pecan Crusted Catfish with Crawfish-Tasso dirty rice, haricot vert and lemon buerre blanc.

     3) Vegan Sweet Potato, Coconut Milk and Chili Ravioli with cilantro and lime.

All dinners are served with rolls, butter, salad. dessert, and choice of non-alcoholic beverage.

We will enjoy Spindletop Hall's special Mansion Salad which is made of artisan greens, grape tomato, cucumber, pickled baby beets, deviled egg and buttermilk herb dressing. Dessert will be Peach and Blackberry Galette with vanilla bean ice cream.

Wine, beer and cocktails are NOT included in the above price, but may be purchased at the open bar before and during dinner. Purchases will incur 6% sales tax. Each individual will pay separately at the bar.

    Round-trip charter buses will transport all participants between the dormitory and the banquet location. Pick up and drop off location will be the same as for the bus excursions. Across Lexington Avenue from the dorm, behind Memorial Colosseum near the temporary white vinyl building that houses the bookstore, in front of "Joe Craft Center."
